My love for chicken does not end and it is for good reason-that  tender, homemade, good smelling, sweet tasting, uniformly browned chicken licking meat turns one into a carnivorous beast any day. But what better way is there to calm the heat sensation of the summer other than a satisfactorily prepared chicken recipe and a chilled soda or beer at your favorite corner on your balcony, just staring into the beautiful ambience of the city. Then again, why not try any of these recipes for your upcoming summer parties, picnics, or just a hangout with friends, a cook date with your partner and I bet you can’t wait to impress your kids with your cooking skills!

1. HONEY CHICKEN KHEBAB WITH GRILLED CORN SALAD

This recipe is perfect for a weekend hang out with friends or family in a backyard setting. However, it never hurts to have a Me Date with you and yourself. You probably need about thirty minutes to complete this dish and fortunately, it requires only a few ingredients to make. All you need is some Chicken breasts, honey, ketchup, Worcestershire sauce (soy sauce may be a close alternative),Salt, powdered pepper (khebab pepper, if you prefer), Oil; for the corn salad Corn, onions, butter, green pepper, scallions and whatever vegetable you would like in your salad. You will need a grill though! Don’t forget to get some wooden skewers as well.

Recipe:

  1. Heat grill to medium high. First off, mix the honey, ketchup and Worcestershire sauce in a small bowl and set aside. Then take your chicken breasts and slice them lengthwise strips. Thread each strip onto a wooden skewer and season with salt and powdered pepper. Then, lightly oil the grill and place chicken in there. Don’t forget to turn occasionally, and whilst you are at it, baste the chicken with your small bowl of honey-sauce-ketchup mixture.

  2. Meanwhile grill the corn on the side and turn occasionally till charred. Chop your vegetables (after thoroughly washing them) for the salad into a small bowl, toss a little butter in it. Then cut the kernels off the corn cob and add to the salad mixture. 

  3. Serve your corn salad with your neatly grilled chicken and voila! It’s a feast!


2. MACARONI SALAD WITH CHICKEN NUGGETS

This is what I call the ‘‘Quick fix’’. On the weekend or a less busy day I may get some good enough quantity of vegetables for salad and others yet to be mentioned that can last me the whole week, and this dish becomes my breakfast for the week.  Its also a good recipe for the overly busy ones that barely have time to put some homemade food on their dinner table. So the ingredients include chicken nuggets, onion, tomatoes, oil, green pepper, macaroni, carrots, mayonnaise and ketchup (both optional) .

Recipe:

  1. Bring a bowl of water boil over high heat and salt it to taste. Add the macaroni and boil, stir occasionally for about eight minutes.

  2. Pour cooked soft macaroni in a strainer to drain out the hot water then add to the salad bowl and mix. Leave the salad bowl in the fridge for some time.

  3. Then, place your frying pan on a high heat with a generous amount of oil. Fill it in with your chicken nuggets and fry till well browned. Drain out fried chicken nuggets. You can preferably add some mayonnaise to your salad and macaroni and mix. Then pour chicken nuggets to the mix. Garnish your dish with some ketchup on top. Enjoy, dearest.


3. GRILLED CHICKEN BREASTS AND PINEAPPLE SLAW

This is equally perfect for a get together with friends and family. It is especially spicy and has a crispy feel to it. The good part- it only takes twenty minutes, however, grilling requires extra attention to get the perfect brown of the chicken. You will need some chicken breasts, oil, cabbage, onion, pineapple, ginger, hot pepper, garlic, chicken spices, and a splash of lime juice, all-purpose flour, and brown sugar (optional). Once you decide to try this recipe, it is advisable to soak the chicken breasts in seasoning for almost 24 hours before you finally grill so the seasoning can go deep into the core of the chicken. However, last minute preparations never killed anybody. 

Recipe:

  1. In preparing the seasoning, toss chopped onions, ginger, garlic, and hot pepper in a blender. Blend till smooth. Pour your mixture in a bowl, add chicken seasoning and a dash of lime juice to it. 

  2. Add some flour and brown sugar (optional) to the mixture and place chicken breasts in there.

  3. Place your grill pan on a medium heat and grease lightly with oil, then put your well-seasoned chicken inside, turning once, until no pink remains.   Remove chicken once you have achieved the perfect brown color you approve of.

  4. Dice pineapple, onion, and cabbage into a salad bowl. Serve chicken with pineapple slaw.


4.  BREAD WITH SHREDDED CHICKEN IN TOMATO SAUCE FILLING

Finally! Something for the a.m.!  You will need some tomato sauce, vinegar, garlic, chili powder, seasoning (preferred) and Adobo, chicken breasts, bread (hamburger/ hot dog buns), cabbage and/or onions, tomato


Recipe:

  1. Mix tomato sauce, vinegar, garlic, chili pepper, seasoning and Adobo in a bowl. Then set that aside. 

  2. Now place your frying pan over high heat and heat oil.  Sprinkle Adobo seasoning on chicken breasts and turn over till evenly distributed. Fry chicken till perfect brown.

  3. Pour your tomato sauce mixture into the pan of fried chicken and reduce heat to medium. Remove chicken after twenty minutes to chopping board. 

  4. Shred chicken breasts with a fork, then transfer shredded chicken back to sauce and stir. Continue to cook till the sauce thickens.

  5. Now you can pour sauce in a bowl, then spoon into your bread. Dice some cabbage and/or onions, tomato into the division of the bread.


5. HONEYED-STICKY CHICKEN

This is more like a homemade lollipop, freaking sweet! I’m sure your kids will love this one. With some ice cold juice or soda on the side, you are good to go.

You will need either chicken wings or thighs, olive oil, butter, soy sauce, ginger, cilantro leaves, lemon juice, garlic, sesame seeds, salt, black pepper. Oh something is off the list….honey!

Recipe:

  1. Toss chicken wings or thighs, ginger, garlic, lemon juice, and cilantro leaves in a bowl, stir, and refrigerate for two hours.

  2. After these hours, remove bowl from the fridge and take the chicken out. Add pepper and salt. 

  3. Place a pan of olive oil over medium heat, melt some butter in the oil. When the butter stops foaming, add the honey and chicken and fry until brown. Consistently turn over the chicken to coat them as the glaze reduces. Gradually, the wings or thighs become sticky. Then remove from the pan unto a serving bowl or plate. Sprinkle sesame seeds to garnish then serve.

I pray you get motivated to try any of these recipes. I pray it comes out as perfectly as was expected and I definitely pray that this summer comes with as much luck as it could bring, and that goodwill includes the kitchen too.
